Christmas Delight: Baked Apple Recipe "Alpin Resort Sacher Seefeld - Tirol Style 2.0"

Christmas time is a time for enjoyment. It is the season to indulge both palate and soul. The Alpin Resort Sacher Seefeld – Tirol in Seefeld has come up with a very special creation for this winter: The baked apple recipe "Alpin Resort Sacher Seefeld – Tirol Style 2.0". Because baked apples are simply a must in winter – but this recipe is a little different! Exciting, thrilling, and above all a flavor explosion – yet so simple to prepare! If you're looking for a dessert that will truly impress your friends and family: Here it is!

The baked apple recipe was created specifically for us by Andreas and Adrian from the kitchen of the 5***** resort – and they really let their creativity shine! The baked apple consists of as many as 7 different components. A surprising mix of fruity-fresh, gently-sweet, and sugary-cinnamony has come together. Sounds complicated? But it isn’t! Because all 7 "sub-recipes" can easily be replicated by less experienced cooks. You can find all the ingredients in an ordinary supermarket, if you don't already have them at home.

All good things are ... seven!

More than just a simple baked apple: This dessert can do more! It consists of a baked apple ring, delicious green apple sorbet, a cinnamon cream, an apricot marzipan cream, granola, vanilla sand, and apple chips. Phew! This list sounds long at first – but these components are exactly what create a pure explosion of flavor! Andreas and Adrian explained to me how to prepare and beautifully arrange all these delicacies – and after that, I got to try them myself...

The tasting

After we had finished preparing the dessert, it was time for the question: "Would you like to taste it?" – "Yesss, please!" was of course my immediate response. I was so curious about how everything would taste. With the first spoonful, I was flying in gourmet heaven – hmmm! Such an indescribable variety of flavors that you simply have to taste for yourself to understand what I’m talking about. Andreas, Digital Marketing Manager of the Alpin Resort Sacher Seefeld – Tyrol, aptly put it into words: Tasting this dessert is like "playing on the plate." You taste your way from one ingredient to another, trying to figure out what pairs best with what. It’s an experience! And Andreas from the kitchen chatted nicely: The different textures of the crispy granola, the frozen sorbet, and the soft creams make this experience perfect.

Green Apple Sorbet

The green apple sorbet provides a fruity-sour kick on the plate. First, water, sugar, and glucose are brought to a boil and then mixed with the other ingredients. The sorbet can then be frozen in an ice cream maker – the sorbet magic is ready!

Green Apple Sorbet

Cinnamon Cream

Cinnamon is simply the ingredient of winter. The cream can be prepared like a pudding. To do this, the milk, cinnamon, and sugar are brought to a boil. Then, the egg yolk is added and stirred with a small splash of milk. Finally, cornstarch is mixed with the milk and used to thicken the mixture. That's it!

Apricot Marzipan Cream

This cream is surprisingly easy. Take the apricots and puree them (for example with a hand blender). Then add the marzipan, stir everything together – and ta-da!

Granola

Granola is basically known as muesli. However, it tastes absolutely excellent with baked apples! To prepare it, simply mix all the ingredients together and spread them on a baking sheet. Bake everything at 175°C with circulating air for about 12 to 15 minutes. The granola can form small clumps, which can be separated later.

Vanilla Sand

The vanilla sand wonderfully complements the granola. You only need 4 ingredients: butter, brown sugar, flour, and a bit of vanilla pod, which you mix together. Then, bake everything in the oven at 180°C and let it dry for another 3 hours. The vanilla delight is ready!

Apple Chips

A highlight for the eyes and palate: the apple chips. Simply cut the apple into very thin slices. A tip from Andreas and Adrian: the finest chips can be made with a bread machine! Then boil the sugar and water until a "simple syrup" is formed. Next, soak the apple slices in this sugar water and then spread them out on a baking sheet. Finally, they are dried in the oven at 60°C for 2 to 3 hours.

Vanilla Sand and Apple Chips

Baked Apple Rings

They are the centerpiece of the dessert: the baked apple rings. First, the batter is prepared, in which they will eventually be fried. Start by whisking the egg yolk with the sugar. Then mix in the oil and white wine. Next, stir in the flour and salt. Beat the egg whites until stiff peaks form. Then combine the egg yolk-sugar mixture with the oil-white wine-flour mixture to form a batter. Carefully fold the beaten egg whites into this mixture. Now peel the apple and cut it into slices. Remove the core. Dip the apple slices into the batter and fry them in oil at 185°C until golden brown. Et voilá – the baked apple rings are ready!
