In Strudel heaven: Organic Pulled Pork Strudel and Kletznstrudel

Strudel olé! Nowhere else is the variety of strudel as pronounced as here in Austria. We fill the strudel dough with all sorts of delicious and creative treats. Whether sweet like apple strudel or hearty with vegetables and meat: It always tastes simply "good"!

Once a year, we celebrate "Strudel Glory" in our region at the big Strudel Festival in Seefeld. Here, visitors can taste the truly best strudels the world has ever seen! (At least that's what we claim – those who don’t believe it must taste for themselves! 😉)

For this occasion, the Biohotel Leutascherhof has come up with some very special recipes this year that will make your mouth water. Two of these creations they are sharing with us: The Organic Pulled Pork Strudel and the Organic Kletzn Strudel.

Kletzen Strudel

Bio Pulled Pork Strudel à la Leutascherhof

If you enjoy hearty food, you should definitely try making the pulled pork strudel: Here, traditional cuisine meets modern ingredients. The rule for pulled pork (in German: "gezupftes Schweinefleisch") is: Good things take time. However, the wait is rewarded with tender meat and pure enjoyment! This strudel differs from many other conventional strudels – also because it is made not with traditional strudel dough, but with puff pastry.

Pulled Pork Strudel

Step-by-step instructions:

Otto Wandl from the Biohotel Leutascherhof prepares his Pulled Pork using the method of Sous-Vide, or "vacuum cooking". This can be done at home either with a steamer or simply in a water bath using a vacuum bag.

First, prepare the spice mix. Mix together paprika powder, rock salt, smoked salt, cane sugar, mustard powder, chili, cumin, black pepper, and garlic, and grind everything finely. Then rub the meat with the spice mixture, place it in the vacuum bag, and seal it. Now let it sit in the water bath or steamer at 65° for about 36 hours. Afterward, take it out of the water bath and let it cool in the bag. Open the bag and collect the juices.

Finally, the meat goes back into the oven: bake it at about 250° on a rack with a drip tray below for about 20 minutes, until a nice crust forms. In between, drizzle the collected meat juices over it. Shred the meat with two forks and mix it with a bit of meat juice. This creates juicy and tender Pulled Pork.

Show Bakery: Apple Strudel

Once the meat is ready, you can proceed with the vegetables. Chop them up and sauté briefly in canola oil. Add spices, mix in the shredded meat with the vegetables, and season with a bit of meat juice. Then place the mixture in the puff pastry and roll it up. If you like, you can shape the strudel into a wreath – this will impress, as it is well known that we eat with our eyes! Now bake for 35 minutes at 180 °C (356 °F) in a fan oven – and the strudel delight is ready!

Otto's Tip: Serve with barbecue sauce, which pairs excellently with this strudel!

Organic Kletznstrudel á la Leutascherhof

For sweet tooths and all "sweet lovers", the Kletznstrudel is just the right choice. "Kletzen" are dried pears and a popular ingredient in strudels, fruit breads, and all sorts of "healthy" sins in our Alpine region. Besides the pears, this Kletznstrudel also contains dried figs and nuts. The preparation is easy and will delight everyone!

Here's how to prepare it step by step:

Otto's Tip: Quarter the dried pears and figs and soak them with the raisins in pear schnapps the day before. This makes them particularly juicy and "tasty"!

Whip the butter until creamy, add powdered sugar, and gradually stir in the egg yolks. Add flavoring ingredients. Whip the egg whites with sugar until stiff. Fold in part of the egg whites, add the nuts, and then fold in the remaining egg whites. Then place everything into the strudel dough, roll it up, and bake for about 35 minutes at 180 °C hot air. Now the strudel can be enjoyed – we wish you a good appetite!

Event Tip:

The big strudel festival presents a variety of strudels that is rarely seen in the Alpine region. Spicy, piquant, sweet, and crispy: a heavenly delight for everyone! In addition to the culinary offerings, there will be authentic folk music, performances by the Seefeld dancers, and a children's program for the little guests.
