Host Franz's secret recipe for irresistible cheese dumplings

Welcome to the world of Tyrolean cuisine! Today we have a recipe from the Tyrolean kitchen, preserved and cared for for generations at Gasthaus Brücke, newly interpreted: Cheese Dumplings made from our purple plateau potatoes, prepared according to the legendary recipe of host Franz.

A true regional original: Our plateau potato

The Plateau potato is the result of an innovative pilot project aimed at promoting regional development and sustainable agricultural practices in the Seefeld region. In collaboration with dedicated farmers, five new potato varieties were tested to create an innovative yet time-honored plateau product. The special organic potato varieties can be purchased at Wirtseppelerhof.

However, our Plateau potato is not only a true local original, but it also tastes really good! Some hotels and restaurants have reinterpreted classic dishes using this potato. You can find various delicious creations, for example, on the menu at Gasthaus Brücke, or you can try your hand at cooking yourself.

Recipe for Kasnocken:

Ingredients:

  • 750g of our plateau potatoes, cooked and peeled
  • 250g bread crumbs
  • 0.5l milk, warmed
  • 350g creamy quark
  • 2 eggs
  • 100g butter
  • 100g onions
  • Coarse flour
  • 60g spicy mountain cheese, grated
  • Salt and pepper
  • Fresh parsley, lovage, and nutmeg
  • Breadcrumbs, for the finishing touch 😉

And here's how it works:
  • First, the cooked potatoes are roughly grated to create the base for our cheese dumplings.
  • Next, the bread crumbs and milk are kneaded together to form a homogeneous mixture.
  • Then, the mixture is combined with the diced onions that have been fried golden yellow in butter, cottage cheese, mountain cheese, and eggs.
  • The mixture is seasoned with a pinch of salt, a dash of pepper, finely chopped parsley, lovage, and a pinch of nutmeg.
  • Gradually, flour is added until a moldable consistency is achieved.
  • From the mixture, we shape small dumplings and let them cook in salted water until they rise to the surface.
  • Finally, coat them with breadcrumbs and fry.
  • Simply enjoy!


Tip: If you don't want to fry all the dumplings at once, you can freeze them and bake them directly from the freezer when needed.
