Recipe from the mountain: Berry cake with semolina and curd from Tillfussalm
A large portion of favorite berries, fresh curd, some semolina, and vanilla pudding: that’s how quickly the perfect summer cake is conjured up. The hosts from Tillfussalm shared their secret recipe for a quick alpine cake that tastes like the best summer days spent in the mountains.
Tillfussalm: Alpine Idylle at 1,382m
In the heart of the idyllic Gaistal lies the rustic Tillfussalm in a particularly beautiful spot. For generations, cows have spent the summer on the lush green mountain pastures here, and guests have always loved to stop by. Because those who take a break here enjoy the best Tyrolean delicacies, lovingly prepared by the hosts themselves. Often even with fresh ingredients like yogurt, milk, buttermilk, and cheese from their own cattle. These graze peacefully in the meadow in front of the hut while you enjoy the view, cuisine, and the soothing ringing of bells from the sun terrace. The paths to the hut are as relaxing as the break itself: those who are on foot can ascend via the Ganghofersteig through the Gaistal to the hut. By bike, you ride along the turquoise-blue Leutascher Ache with only a mild incline up.



Enjoyment from the Alpine Pasture
Fresh ingredients from the alpine pastures, a pinch of mountain air, and lots of leisure – perhaps this is the secret to why the berry cake with semolina and quark turns out so exceptionally well. But even at home, the cake tastes delightful and brings the alpine summer to your plate. The young hosts Patrick and Jonas, who run the Tillfussalm together, have shared the recipe with us. The preparation takes only a few steps and is particularly quick – we think that's great!

Berry cake with semolina and quark: The recipe from Tillfussalm
Ingredients:
- 100g butter
- 250 berries (fresh or frozen)
- 3 packs of low-fat cottage cheese
- 3 eggs
- 250g sugar
- 3 tablespoons semolina
- 1 packet vanilla sugar
- 1 packet vanilla pudding powder
- 2 teaspoons baking powder
- Juice of 1 lemon
Preparation:
Preheat the oven to 175 degrees Celsius (fan). Meanwhile, grease a baking tray and line it with semolina. Melt the butter in a pot and either thaw the frozen berries in it or add the fresh berries. Mix the remaining ingredients in a bowl and then transfer to a baking dish. Finally, distribute the berry mixture on top. Bake the cake at 175 degrees Celsius (fan) for 60 to 70 minutes. Allow to cool, decorate a little – and enjoy!
