Plateau Products: Regional Delicacies from the Seefeld Region

Honey, syrup, handmade teas, tinctures and a variety of pasta creations: In the Seefeld region, numerous products are created with a close connection to the Tyrolean high plateau. Behind them are farmers, beekeepers and other producers who bring their knowledge, experience, and a lot of passion into their products.
Many of these products are available in the regional shelf. We will introduce some of the people and farms behind them in more detail.

Regionality: Products with Origin and History

Interest in food and products from the local area has significantly increased in recent years. Many people want to know where products come from, who makes them, and what story lies behind them.

In the Seefeld region, there are numerous agricultural businesses, beekeepers, and small manufacteries. With experience, craftsmanship, and creative ideas, products are created there that are closely connected to the region. Particularly, Leutasch is characterized by agricultural businesses, but engaged producers can also be found in the other towns of the region.

Ferdi's Beekeeping

The hardworking bees from Ferdi's beekeeping are at home in the Tyrolean mountains: They journey up to about 2,000 meters above sea level – so to speak, with "mountain flight permission." In the mountain and alpine meadows, they collect nectar and pollen from various plants. Ferdi processes the products from his bee colonies with great passion into honey, propolis products, and other specialties from his beekeeping. Through a friendly chef, he discovered his fascination for bees and has been a certified beekeeper for several years now.

Together with his girlfriend and dog Audax, Ferdi takes care of his bee colonies. This also includes breeding queen bees and establishing new young colonies. A mindful approach to bees and their habitats is particularly important to him in his daily work.

This is how a variety of products are created in Ferdi's beekeeping – from creamy spring honey to mead vinegar to care products with propolis and honey.

Did you know?

  • 1 bee has to fly around the Earth 7 times to produce 1 kg of honey
  • Approximately 14,000,000 flowers must be visited for 1 kg of honey
  • Winter bees can live up to 8 months, while summer bees work themselves to death in 6 weeks
  • A queen can lay up to 2,500 eggs per day

Wirtseppelerhof

The Wirtseppelerhof is located at the entrance of the Gaistal valley, surrounded by meadows and the distinctive mountain landscape of Leutasch. Simone and Mathias Neuner run the organic farm as a full-time business. The farm includes a cattle breeding operation as well as potato and vegetable fields. The family follows the guidelines of organic farming in their management.

A special centerpiece of the farm is the herb garden. Here, Simone, a qualified herbal educator, has created her own realm. She knows the properties and traditional uses of various plants and processes the harvested herbs into handmade teas, bitter tinctures, vinegars, spices, and other products.

In her lovingly managed farm shop, which is open 24 hours, you will find her herb products as well as homemade farmer's bread, meat from the farm, herbal pillows, greeting cards, and much more.

Simone originally did not expect to become a farmer. The trained business informatics specialist ended up at the farm by a happy coincidence. The Wirtseppelerhof in Leutasch:

  • is a 3-generation farm and organic farm in full operation
  • is home to 8 cows and their calves, a horse, rabbits, pigs, hens, and cats, all of whom enjoy plenty of freedom and space
  • offers an organic herb garden

Various kinds of handmade organic tea, syrups, herb salt and spices, herbal vinegar, bitter tinctures, and much more.

Zottlhof

High up in Leutasch, at the foot of the distinctive Hohe Munde, lies the Zottlhof with its namesake inhabitants: the Highland cattle. Regina and Bernhard Wolf have been running the farm for more than ten years. It all started with three cattle, which over the years have grown into a larger herd. In their breeding practices, Regina primarily focuses on time, patience, and tranquility. The work on the farm is strongly guided by the seasons and the needs of the animals.

The Zottl spend the summer on the alpine pasture and live in the open stable during the winter. Thanks to their thick fur, the Highland cattle cope well with snow and low temperatures. A special moment each year is the first time they go out to pasture in spring: then they energetically leap out of the stable to the large pasture – a view that continuously moves Regina.

At Zottlhof, there are stable tours for everyone who wants to get to know the Zottl better. Additionally, Regina runs her own small, but very fine farm shop featuring products from the Zottl.

The Zottl at the Zottlhof:

  • owe their name to their coat: the "shaggy" coat is their trademark
  • have horns that can span up to 1.60 meters, which help them search for food in the snow during winter
  • have a very gentle and good-natured character
  • have been bred in-house. Highland cattle are a breed that has not been further bred for milk or meat production
  • are allowed to spend the summer on the alpine pasture from June to September
